In 2004 Giuseppe Di Martino, a three-generation pasta maker in Gragnano, realized that the traceability of the raw material used to produce Italian pasta was approximate, interrupting at a given point in the chain and not allowing either the final consumer or often the same pasta maker, to understand where its main ingredient came from: durum wheat semolina.
